Pumpkin Cookie Recipe


Delicious, nutritious and simple Pumpkin Cookie recipe for an absolutely yummy treat!



Such a simple recipe for these simply delicious Pumpkin Cookies! They are yummy and, dare I say, nutritious. These cookies are soft and a bit cakey. You may want to try the Banana Cookie recipe as well – it's just as easy and just as good!

INGREDIENTS
1/2 cup oil
1/2 cup brown sugar
1/2 cup maple syrup OR honey
1 egg
2 cups whole wheat flour
1 cup cooked pumpkin or butternut squash (peel and dice the pumpkin or butternut squash, steam and let cool)
1 tsp. baking soda
1/4 tsp. salt
1/2 tsp. ground cinnamon
1/2 tsp. cloves
1/2 tsp. powdered ginger
1/2 tsp. nutmeg
1/2 cup pumpkin seeds (unsalted)
1/2 cup chocolate chips

PREPARATION
1. Smush up the cooked squash or pumpkin and add the baking soda. Set aside

2. In a mixing bowl, mix together the oil, flour, sugar, honey/syrup and egg.

3. Add the salt, and all the spices.

4. Mix in the mashed pumpkin/squash.

6. Stir in the pumpkin seeds and chocolate chips.

7. On a prepared cookie sheet, place spoonfuls of the batter leaving room between each cookie.

8. Bake at 180C (350F) for 10-12 minutes or until the cookies are done.

This recipe makes a soft cakey-like cookie which is mildly sweet. The combination of the sweetness from the pumpkin or squash with the maple syrup or honey is delicious. The pumpkin seeds add a nice crunch. You can add sunflower seeds instead of or as well as the pumpkin seeds or use any other kind of nuts you wish like walnut or pecan. This could be a great seasonal treat during the holiday season!
