Chickpea Salad can be assembled in minutes and it is a great side dish for any meal! As I've stressed in various places throughout this site, my motto is "simple and easy" and this recipe is just that!

INGREDIENTS 1 tin chickpeas (garbanzo beans) 1 large tomato, diced 3 tbsp. fresh chives, chopped 1/2 tsp. dried thyme (or fresh if you have) 3 tbsp. lemon juice 1 stalk celery, diced Salt & pepper, to taste
PREPARATION Open the tin of chickpeas (AKA garbanzo beans) and drain all the liquid. Place in bowl and add all the rest of the ingredients. Let marinade at least one hour in the refrigerator, Serve.
