Easy Cauliflower Quinoa Recipe Side Dish

This lovely and easy cauliflower quinoa recipe with quinoa and pine nuts makes a simple and very tasty side dish for any meal… Simply Yummy!

This is a really easy cauliflower and quinoa recipe and it is really very good. It is a hit with my kids and there are never any leftovers. You can play around with it – add some cranberry raisins or chopped chives – or anything you like actually. We like it just as it is. Did I mention EASY? – just the way I like it!

1 1/4 cup quinoa (aka kinwa)
2 tbsp. olive oil
1 onion
1 head cauliflower
1/3 c. water
1/3 cup pine nuts
1 bunch parsley
Juice of 1/2 lemon
Salt and pepper to taste

1. Prepare the quinoa (kinwa) per package directions. Or simply rinse under cold water, place in pan with 2.5 cups water and a dash of salt and cook until the water is absorbed and the quinoa is fluffy. Simple !

2. Toast the pine nuts for a couple of minutes in a dry pan over the fire.

3. Chop the onion very finely and sauté in the olive oil until golden.

4. While the onion is on the fire, break the cauliflower into small florets and chop the stems into small bits. Rinse in cold water.

5. Add the cauliflower to the sautéed onions and pour in 1/3 cup water. Cover and cook 5 minutes until the cauliflower is tender (but not mushy).

6. Mince the parsley finely.

7. Add the cooked quinoa (kinwa) to the cauliflower and mix it through. Add the pine nuts and minced parsley and lemon juice. If you like, you can drizzle olive oil over the top before serving.

8. Serve warm or room temp. YUMMY!

• Walnuts or slivered almonds can be used in place of or in addition to the pine nuts.
• You can try adding dried cranberries. (craisins)
• You can add any minced herbs you like to freshen this up – basil, rosemary, chives…
• Chopped celery sautéed together with the onion adds a nice flavor.
