A Delicious and Interesting Sumptuous Cauliflower Soup Recipe

Mimi's Roasted Cauliflower Soup

The roasted vegetables used in preparing this Sumptuous Cauliflower Soup recipe add an unexpected depth of flavour, considering the simple ingredients used in this simple soup. This soup is deceptively creamy and rich although it contains no cream or butter.

4 tblsp. olive oil
1 whole cauliflower cut into florets
2 medium potatoes peeled and cubed
1 onion chopped
2 cloves garlic
1 1/2 tsp. salt
1/2 tsp. pepper
1 sprig fresh rosemary OR 1/2 tsp. dried rosemary
5 cups vegetable stock OR 5 cups water with 1 bullion cube
Parsley sprigs for serving
Optional: Grated parmesan cheese to serve

Preheat oven to 280C (520F). Wash the cauliflower florets well in water with 2 tbsp. lemon juice. Place the cauliflower and potato in a baking dish with 2 tblsp. olive oil. Mix to coat the cauliflower and potato wth olive oil. Place in oven for 20 minutes.

In a large saucepan saute the chopped onion in the remaining 2 tbsp. of olive oil. When the onion is transparent, add the garlic and chopped rosemary leaves and cook for two minutes. Add salt, pepper and stock and bring to boil.
Add the roated cauliflower and potato and simmer for 5 minutes.Using a slotted spoon, transfer all the vegetables to a blender or food processer and process until smooth. Return to pot and reheat the soup. It should have a creamy texture and delicate flavour.

Serve with a sprig of parsley. For added flavour, sprinkle grated parmesan cheese over the hot soup.
