This marinated cauliflower salad is a super side dish - it is simple to prepare and oh-so-tasty.
This easy cauliflower salad is so very simple to make but it is such a lovely and tasty side dish. I made it last week for my family and the kids couldn't get enough of it! And look how pretty it is! So colourful and fresh looking. It takes minutes to put together - and even less time to finish the entire bowl!
1/4 cup lemon juice
1/4 cup olive oil
1 tbsp. good-quality prepared mustard (Dijon or similar...)
2 garlic cloves, crushed
salt, pepper to taste (I like using sea salt)
Whisk all the marinade ingredients together and set aside.
4 cups cauliflower broken into florets
1 red pepper, diced
3 green onions (scallions) - chopped
1/2 cup chopped parsley
1/4 cup chopped coriander leaves (optional)
10-12 basil leaves chopped
Place all the veggies into your serving bowl. Pour the marinade over and toss well. Ideally you want to leave the salad to marinade in the refrigerator for 2-4 hours, but trust me - this is really, really yummy even after 1/2-1 hour.

- Low in fat and carbohydrates but high in dietary fiber, iron, and vitamin C.
- Contains Phytochemicals that have been found to be beneficial to health.
- Can be eaten raw, can be roasted, boiled, fried or steamed.
- Steaming or microwaving cauliflower (rather than boiling) better preserves the anticancer compounds.
