This a simply delicious and very easy cabbage soup recipe packed with veggies and bursting with flavour!
This is a wonderfully rich cabbage soup recipe - great for a cold winter night, great as light meal - it's just really good! Filled with vegetables like cabbage, potato, onion, carrot and mushrooms this soup will be loved by all.
1 onion, slided thinly
2 cloves garlic
4 potatoes, diced
2 carrots, diced
5 large mushrooms (or more smaller ones), sliced thinly
1/2 of a large green cabbage, shredded
2 bay leaves
soup bouillon - totally optional
5 cups water OR vegetable broth
1 tin crushed tomatoes
3 tbsp olive oil
salt and pepper to taste
Heat the olive oil in a soup pot. Add the onion slices and saute until golden.
Add the crushed garlic and stir well.
Stir in the mushroom slices and saute a few minutes longer.
Now stir in the diced potato and carrots and stir well.
After a minute or two, add the shredded cabbage.
Pour in the liquid (water or broth) and add the crushed tomatoes.
Drop in the bay leaf and season with salt and pepper.
Let the soup simmer on a low fire for 45 minutes to an hour.
Taste and add salt and pepper to taste.
