Cabbage Pie

This is a delicious Cabbage Pie with a rustic, homey flavour. This can be a wonderful family dinner or a terrific addition to a Sunday brunch!

This wonderful Cabbage Pie can be made in two ways - you can use store-bought frozen puff pastry or you can use store-bought frozen fillo dough pastry (aka phylo or phyllo). Both versions are equally delicious - try them both and see which you prefer! 

This recipe has a bit of a Greek flavour to it - it reminds me of the Greek Spanakopita recipe I had in Mykonos. 

INGREDIENTS

1 large green cabbage - cored and shredded or sliced very thinly  

1/4 cup olive oil

1 large onion, sliced

2 cloves garlic, chopped

salt and pepper to taste

1/4 cup chopped dill

1/4 cop chopped parsley

3 eggs

1 cup feta cheese

1 cup grated cheese (any kind you like)

12 sheets phyllo dough OR 1 package frozen puff pastry


PREPARATION  

Place 2 tbsp olive oil in a large pan and saute the onions. After about a minute, add the garlic and continue sauteing until the onion is golden. Add the cabbage and cook together, all the while stirring, until the cabbage is tender. 

Add salt and pepper to taste and stir in the dill and parsley. Do not over-salt at this stage keeping in mind that the feta cheese will add more salty flavour as well. Set aside to cool.

In a separate bowl, whisk the eggs and crumble the feta cheese into the egg. Stir in the grated cheese.

Now, if you are using phyllo dough:

Using olive oil or spray, spread some oil over the bottom of a rectangle baking dish. Place one sheet of phyllo - being careful not to tear the sheet. Brush pr spray the sheet with olive oil. Repeat 6 times.

Now pour the cabbage filling into the baking dish. Pour the egg-cheese mixture over top).

Place four more phyllo sheets (each brushed with olive oil) over the filling and tuck the edges in (like you're tucking in a bed) so that all sides are sealed.

With a sharp knife, cut air slits into the top. Bake at 160C / 320F) for about 30 minutes - until golden - and serve hot or room temperature.


Now, if you are using puff pastry:

Using olive oil or spray, spread some oil over the bottom of a rectangle baking dish. Open the pack of defrosted puff pastry and cut a piece to fit the bottom of your baking dish. Place the pastry in the baking dish and stretch the edges up about half-way up the sides of the dish.

Now pour the cabbage filling into the baking dish. Pour the egg-cheese mixture over top).

Cut a second piece of puff pastry to the size of the dish and place it over the filling. Tuck the edges in (like you're tucking in a bed) so that all sides are sealed. Brush the top with olive oil. 

With a sharp knife, cut air slits into the top. Bake at 160C / 320F) for about 30 minutes - until golden - and serve hot or room temperature.
