Cabbage Mushroom Onion Recipe

This is so simple – just three main ingredients – a few minutes on the stove top and that’s the whole deal!

This Cabbage Mushroom Onion recipe is so easy it’s almost embarrassing – but it is really yummy and makes a great side dish for any meal. It goes especially well with my Beet Borscht soup recipe and Potato Rosti Hash Brown Potatoes & Kelp Caviar recipe for a light, simple meal based on the tasty and flavourful dishes of Russian Cuisine.


  • ½ head cabbage
  • Various types of fresh mushrooms (button, wild, Portobello – any kind) – about ½ kg. / 1 lb. 
  • 1 large onion
  • 3 tbsp. olive oil
  • Salt
  • Freshly ground pepper


  1. Remove the hard core from the cabbage. Slice very thinly.
  2. Wash and dry the mushrooms. Slice them thinly.
  3. Peel the onion. Cut in half and slice thinly.
  4. Heat the olive oil in a pan. Add the onion and sauté until golden and soft. Add the cabbage and continue sautéing until the cabbage is wilted. Now add the mushroom slices and continue sautéing for a few more minutes.
  5. When all the vegetables are cooked through, remove from heat. Sprinkle with salt and ground pepper to taste.

There you have it – done. A simple side dish with yummy flavours.
