Bulgur Sweet Potato Recipe
This bulgur sweet potato recipe is easy – like all my recipes. What's more, it tastes great and can be a satisfying side dish for any simple meal. Bulgur is so good for you too- it is a great source of vitamins and minerals and contains more fiber than rice and couscous. Some other Sweet Potato recipes that have become my family's favourites are my Sweet Potato Soup and Sweet Potato Pie.
1 cup bulgur
1 1/2 c. boiling water
2 sweet potatoes(yams)
3 tbsp. olive oil
1 tsp. dried thyme OR fresh thyme leaves
2 tsp. dried basil OR 5-10 fresh basil leaves, chopped
1/2 tsp. salt
1/2 tsp. pepper
1/2 cup pine nuts (or slivered almonds can be used as well)
Peel the sweet potatoes and cut into bite-size chunks. Heat the olive oil in a pan and add the sweet potato chunks. Sauté on low heat, stirring often, until the potatoes are soft and cooked through. You can cover the pan, but you have to watch to ensure they don't burn.
Once the potatoes are cooked through, assemble your dish. Mix the sweet potato pieces in with the bulgur. Add the thyme and basil leaves and season with salt and pepper, to taste.
In a hot pan, toast the pine nuts (or almond slivers) for a few minutes but watch them very carefuly so that they don't burn. The pan must be dry and clean and toast for just a minute or two.
