Bulgur Leek Patties

These Bulgur Leek Patties are packed with good nutrition and taste wonderful as well. They take very little time to prepare and are best served piping hot. They keep well and I have been known to eat the leftovers straight from the refrigerator without bothering to heat them up.

This is one of the few recipes that I actually recommend frying in hot oil rather than baking. As a general rule, I shy away from fried foods, but the Bulgur & Leek Patties are best fried, so why ruin a good thing?

4 leeks, sliced lengthwise and washed clean
2 carrots, grated coarsely
I onion, chopped
2 tbsp. olive oil
1 cup bulgur, soaked in 11/2 cup boiling water for 15 minutes
2 tbsp. flour
2 eggs
Salt and pepper to taste
Vegetable oil for frying

Clean leeks well and chop coarsely. Cook in boiling salted water until soft and tender. Drain well and chop finely. Sauté the chopped onion and carrots in olive oil. In a mixing bowl, combine leeks, onions, carrots, eggs, drained bulgur, flour and seasoning. Shape into small balls and press to flatten. Fry in hot oil on both sides.
