Broccoli Pesto for Pasta

For the Pesto:

3 cups Broccoli florets
1/2 cup walnuts (Mimi's comment - soak in water for 1-2 hours prior to use and drain)
1 clove garlic
Juice of 1/2 lemon
salt and pepper to taste
OPTIONAL - 2 tbsp nutritional (brewers) yeast
1/3 cup olive oil

For the Pasta:
1/2 cup chopped black olives
1 cup (packed) spinach leaves - chopped finely
1 package pasta - cooked al-dente

1. Steam/cook the broccoli for 1-2 minutes in salted boiling water
2. Place the broccoli and all the rest of the Pesto ingredients into a food processor or blender and blend until smooth.
3. Cook the pasta and drain. While still hot, mix in the chopped spinach and olives and then pour the pesto sauce over top.

Serve and Enjoy!
