Bean Salad with Lima Beans and Green Beans

This is a Yummy Bean Salad made with lima (wax) beans, green beans, tomatoes and sweet onion, this is a delicious and healthy side dish – or it can be a simple lunch just on its own!

INGREDIENTS
1 cup lima beans soaked overnight (if you are really in a rush you can use tinned but the flavor will be different)
500 gr / 1 lb. green beans cleaned (or use frozen to save time)
12-15 cherry tomatoes - halved
1/2 of a red onion sliced thinly
1 clove garlic – crushed
Chopped chives or green onions - OPTIONAL
Salt, pepper
Splash of balsamic vinegar
1/4 cup wine vinegar
1/4 cup olive oil
OPTIONAL – chopped green or red hot pepper – this really adds a nice kick if you like hot peppers

PREPARATION
Soak the beans overnight. Fill a pot with water and cook the beans (without adding any salt or seasoning) until soft. This can take a while – sometimes a few hours – test the beans from time to time to check softness and add water if necessary. I know people who use pressure cookers and this cuts the cooking time by a lot but I have never tried.

When the beans are cooked through add the green beans to blanch (about 2 minutes). Remove all the beans from the water.

While still hot, add the tomatoes, onion slices and season with salt and pepper.

Mix together the vinegars and olive oil and crushed garlic - pour over the top.

Leave to marinade in the refrigerator for a few hours before serving – overnight is even better.

Garnish with the chopped chives and green onions before serving.
