Banana Bread Recipe


This is a rich, dark and delicious Banana Bread recipe your family will love!



This so extremely simple and so extremely good. You'll have a delicious Banana Bread or moist Banana Muffins ready in minutes!

INGREDIENTS
2 cups whole wheat flour (you can use any flour if you like, or combine white and whole wheat – whatever works for you)
1 tsp. baking powder
1/4 tsp. salt
1/2 cup butter OR margarine OR veg. oil OR coconut oil
3/4 cup brown sugar
2 eggs
1 tsp. vanilla essence
4 very ripe bananas
1 tsp. cinnamon
1/2 tsp. ground nutmeg
Optional: 1 tsp. cloves

PREPARATION
1. Beat together the butter/margarine/oil with the sugar, salt, eggs and vanilla until creamy
2. Add the peeled bananas and beat until smooth.
3. Mix in the flour, baking powder and spices – do not over mix.
This entire process takes about two minutes if you are using a food processor. If you are using a hand mixer it will take a little bit more time and effort but it is still a really simple recipe.

Pour the mixture into a prepared loaf pan or muffin tins. You can even use a regular cake pan. Bake at 175C (350F) for one hour (60 minutes). (For muffins cut the baking time in half). Check with a toothpick if the centre is cooked through and remove from oven when done. Cool before removing from pan.

Variations and Options

**You can swap some of the sugar with honey or silan date honey or even maple syrup if you want interesting falvours.

**Try adding chopped nuts for extra texture and taste

**Sometimes I add chocolate chips as well when making the muffins – they turn out great!
