Banana Cookies


This recipe for delicious and nutritious banana cookies takes mere minutes to prepare.



These Banana Cookies take almost no time to prepare. They are delicious and, dare I say, nutritious. This is a great way to give in to the kids' sweet tooth without felling guilty. You may want to try the Pumpkin Cookie recipe as well – it's just as easy and just as good!

INGREDIENTS
1/2 cup oil
1/2 cup brown sugar
1/2 cup silan date honey OR maple syrup OR honey
1 egg
2 cups whole wheat flour
2 ripe bananas
1 tsp. baking soda
1/4 tsp. salt
1/2 tsp. ground cinnamon
1/2 tsp. cloves
1/2 tsp. powdered ginger
1/2 tsp. nutmeg
1/2 cup pumpkin seeds (unsalted)
1/2 cup chocolate chips

PREPARATION
1. Smush up the ripe bananas and add the baking soda. Set aside

2. In a mixing bowl, mix together the oil, flour, sugar, honey/syrup/silan and egg.

3. Add the salt, and all the spices.

4. Mix in the banana.

6. Stir in the pumpkin seeds and chocolate chips.

7. On a prepared cookie sheet, place spoonfuls of the batter leaving room between each cookie.

8. Bake at 180C (350F) for 10-12 minutes or until the cookies are done.

This recipe makes a soft cakey-like cookie which is mildly sweet. The combination of the sweetness from the banana with the syrup or silan is delicious. The pumpkin seeds add a nice crunch. You can add sunflower seeds instead of or as well as the pumpkin seeds or use any other kind of nuts you wish like walnut or pecan.
