Baked Potato Wedges


Crispy baked potato wedges with spicy curry flavor and a honey-mustard dipping sauce – DELISH!


The local pub in our town serves up the most delicious spicy baked potato wedges – they call them "baked potato chips" but I'd best describe them as the best curried potatoes in the world!

Did I mention how easy this is?


INGREDIENTS
4-5 potatoes
25 gr. Melted butter (1/4 cup)
1 tbsp. curry powder
1/2 cup bread crumbs
Salt and pepper to taste

PREPARATION
1. Peel the potatoes if you like. Cut each potato into half and each half into 3-4 wedges (6-8 per potato depending on size).

2. Par-boil the potatoes for 5 minutes. Remove from heat and drain. Let stand so that the moisture evaporates. 3. Mix the salt, pepper, curry powder and melted butter in a large bowl or deep dish.

4. Put the potato wedges into the deep dish with the butter-spice mixture and mix them around until they are covered with the spicy butter .

5. Dip the wedges into the bread crumbs. They won't be thikly covered and that's okay.

6. Spray a baking sheet or cookie sheet with vegetable spray. Line the potato wedges up on the baking sheet and place in the oven.

7. Bake at 182C/350F for about 20 minutes – you'll need to turn them half way thru.

8. Serve with a sprinkling of salt or with Honey Mustard Dip.

*Honey Mustard dip is just that… 1 tbsp. honey, 1 tbsp. mustard, 5 tbsp. mayonnaise – mix and serve!
