Baked Felafel Patties

Felafel (Vegan)

24 Felafel Patties

INGREDIENTS
1 cup chickpeas, soaked overnight
3 slices whole wheat bread, soaked in water and all the liquid squeezed out.
3 garlic cloves
1 medium onion roughly chopped
1 small bunch parsley
1 tsp. baking powder
pinch of cinnamon
1 tsp. cumin
black pepper
1 tsp sea salt
2 tbls. olive oil

PREPARATION
1. Blend all the above ingredients together in a food processor.
2. Form golf-ball size patties
3. Refrigerate for two hours
4. Line a baking sheet with wax paper or with a silicone sheet. Place the patties on the pan and bake for 15 minutes. Turn the patties and bake another 10 minutes. Check the felafel to ensure they do not dry out. Bake at 180C / 350F.

These patties can be frozen and re-heated.
Serve with tahini sauce and a fresh chopped tomato and cucumber salad. These Felafel patties can be served with pita bread for an authentic Middle Eastern treat!

Option - the patties can be deep-fried in oil instead of baked. This is more authentic but we prefer the baked version!
