Muffins are a yummy snack and this Almond Muffin recipe is not only easy and tasty but vegan too! Try these tasty treats any time of day. And they are SO, SO simple to make!!
¼ cup almond paste (without sugar or any additives)
¼ cup maple syrup (you can substitute silan date syrup)
¾ fine oatmeal (not instant)
1/3 cup spelt flour*
¾ tsp baking soda
½ cup apple sauce (you can use ready-made OR you can use ½ cup of finely grated apple)
½ cup chopped almonds
Mix together the almond paste with the maple syrup (or silan). Add the apple sauce and mix. Now add all the dry ingredients and combine well.
Spoon the batter into muffin tins – this recipe will make about 12 muffins.
Bake at 180C (350F) for about 20 minutes or until a toothpick comes out clean.
Delicious as an after-school snack or even as a breakfast treat.
* Did you know… ? Spelt flour contains about 57% carbohydrates, 17% protein and 3% fat, as well as dietary minerals and vitamins. As it contains a moderate amount of gluten, it is suitable for some baking. but is not suitable for people with celiac disease.
